Coriander & Walnut Sauce

Serves: 4

Prep Time: 5 minutes

Ingredients:

1 tablespoon olive oil

50ml double cream

25g cheddar cheese, grated

25g walnuts, finely chopped

25g fresh coriander, finely chopped, plus extra sprigs to garnish

salt and pepper


Steps:

1. Place the olive oil and cream in a bowl.

2. Add the cheese walnuts and chopped coriander. Season with salt and pepper and mix all the ingredients together thoroughly.

3. Pour over freshly cooked pasta and stir well to combine. Garnish with Coriander sprigs and serve immediately.

Fresh Tomato Sauce

Serves: 4-6

Prep time: 10 minutes

Cooking time: 35 minutes

Ingredients:
1 tablespoon olive oil

1 celery stick, chopped

1 carrot, chopped

2 onions, chopped

2 garlic cloves, crushed

1 kg (2 lb) large ripe tomatoes, quartered

2 teaspoons caster sugar

2 tablespoons chopped basil

salt and pepper


Steps:

1. Heat the oil in a saucepan, add the celery, carrot, onions and garlic and cook gently for 3 minutes, stirring, until tender.

2. Stir the tomatoes, sugar, basil and salt and pepper to taste. Bring to boil. Reduce the heat, cover the saucepan with a lid and cook gently for 30 minutes.

3. Transfer the sauce to a blender or food processor and process until smooth. Reheat and serve over freshly cooked pasta.

Recipe 1: Flutterberry's Soft and Fluffy Omelet

This lightweight omelet will make your mornings extra special!:)

Ingredients:
4-5 Eggs
Salt
Pepper
4 tbsp. Milk
1/2 tbsp. Butter


How to's:

  • Separate egg whites and yolks then combining all whites in a bowl while beating softly. Then add a pinch of salt and pepper. Add yolks one at a time until fully blended.
  • Heat the saucepan in medium heat and melt the butter.
  • Add the milk and fold slowly then pour the batter to the pan.
  • Carefully stir and fold the eggs to equally cook them. (I don't like raw eggs in my omelet)
  • Wait till the eggs are nicely colored (very light brown but not overcooked)
  • Turn off the heat and serve the omelet
Makes 2-3 servings
